Here’s an interesting one. Go to many WWE games, go to the wrestler select screen, you see the number next to the wrestler, that is how strong they are in kayfabe. Here are old ones that caught my eye since they usually seem weird today or even back then.
Smackdown: Here Comes The Pain: Legend Undertaker(Dead Man) being rated higher than Brock Lesnar and Goldberg.
Day of Reckoning: Bret Hart being rated higher than HHH since Bret was still upset at WWE and this was during HHH at his most pushed.
Smackdown vs Raw: John Cena who was US champion that year being rated higher than Eddie Guerrero who was WWE champion that year and Undertaker who returned to being the Dead Man that year.
SvR 2006: Mankind has a higher OVR at 91 than Stone Cold at 90.
SvR 2007: Stone Cold/The Rock/Cactus Jack/Mankind/Shawn Michaels all share a 91 while Bret Hart has a 92. HHH being rated higher than Prime Hulk Hogan, 94 to 93. Kurt Angle being higher than both at 95. Rey Mysterio being higher than Batista, 90 to 89.
WWE 2k16: 2000 The Rock being the highest rated in the entire game, DLC Kevin Nash being the same overall as prime Stone Cold, I believe Biker Undertaker was the highest rated Undertaker as well.
WWE 2k18: Early 90s Undertaker being the highest rated Taker, which makes sense since he kayfabe felt no pain when you hit him. Missed opportunity to give him the Terminator thing from 2k16. Demon Finn Balor being equal to Stone Cold.

Also interesting to note that Chris Benoit always got a higher rating than Batista, even when Batista was pushed firmly in Main Event and they kept Benoit in the Upper Midcard scene.

2k14 one I remember off the top of my head: Hollywood Hogan being the same rating as The Miz and lower than nWo Hall and Nash. lol And I think later Shawn Michaels has the same overall as 80s Hogan too, not too sure.

More on that 2007 one: Undertaker and Batista have the same rating, so this means Mysterio is higher than Batista/Undertaker and equal to Chris Benoit, pushed WWE champion Edge and also pushed WWE champion John Cena. lol
Yeah a lot of the ratings with guys like Benoit have always been inflated due to the stats system. (Generally guys who use submission finishers.)
Guys like Big Show/Great Khali being "low rated" in 2007, but being top tier due to their actual attributes, while Rey was mid at best due to being like a 7 in durability.
Overall ratings (at least in older games) weren't necessarily kayfabe strength. It was more about how well rounded their skill set was at the time.

The Miz’s overall rating in SvR 2010 was a 78. Some of the divas were rated equal to or higher than him. It wasn’t until 2011 that it jumped up to an 88.
